Friday Favorites – Fall Soups

I love a good soup in the fall and winter! I use my crockpots so much to cook, especially during the week, and soups are so easy in the crockpot!! So many of you wanted to the recipe for the lasagna soup I made last weekend so I decided to share a couple other soups that I make all the time! The lasagna soup is probably my new favorite though!!:)

 

Lasagna Soup

Here is the recipe, which I found on pinterest.  I made a few tweeks to it so I’ll share those with you!!  First off, I didn’t use the prego sauce it calls for, we always use this Hunts Pasta Sauce (probably so unhealthy) but its salty, not sweet, which is what Matt & I love.  So I suggest using whatever pasta sauce you normally use!!  I also did not use the heavy cream!  It calls for tons of chicken broth, so just make sure you buy enough!! I assumed one carton would be plenty and it wasn’t, luckily I had some extra in my pantry.  I also used whole grain pasta.  You really can’t taste a difference!  I waited and added the cheese once I dished up the soup to save myself from having to scrub the cheese off the pan for hours!!  I hope you enjoy! It is a great one pot meal for the weekends, so delicious!!

 

Chicken Taco Soup

This is my favorite because its just so easy and so good!

3 chicken breasts

1 package taco seasoning

1 jar of salsa (your choice)

1 can of sweet corn

32 oz. Chicken Broth

1 can diced tomatoes

1 can black beans

Cook the chicken on low 6-8 hours with taco seasoning, garlic powder, salt & pepper and a little chicken broth.  Shred chicken and add everything else:)  Let sit for a b out an hour or until everything it heated thoroughly.  Serve with Mexican cheese and sour cream on top.  Crushed tortilla chips is a good way to add some crunch (like crackers) if you need it!!

 

White Chicken Chili

I got this recipe from a friend a couple years ago and it is soo good!! Its a perfect twist on regular chili.

2 lbs chicken breast

2 onions, chopped

2 can northern white beans

32 oz chicken broth

8 oz chiles

1 tbsp garlic powder

2 tsp salt

2 tsp oregano

1 tsp cumin

1/4 tsp cayenne pepper

2 cups sour cream

1 cup heavy cream

Place all ingredients in crockpot except sour cream and heavy cream.  Cook on low 7-8 hours.  Add sour cream and heavy cream for last 1/2 hour.  I cook my chicken ahead of time then shred it before adding ingredients.
